Réserve Mouton Cadet Sauternes 2023 - 37,5cl
Description
The Sauternes region benefits from a specific microclimate, with morning mists in autumn, ideal for the development of noble rot, which concentrates sugars in the grapes. The selected vineyards have gravelly soils over limestone and clay-limestone subsoils, contributing to the softness (moelleux) and aromatic balance typical of the wine.
2023 Harvest:
After a contrasting winter, the spring of 2023 was balanced in terms of rainfall and temperatures.
A warm start to summer led to good flowering and rapid development of the grapes.
A particularly hot and dry late summer accelerated ripening, resulting in excellent aromatic concentration.
The 2023 vintage is described as a "solar harvest," producing sweet (fortified) wines with rich aromaticity and remarkable volume.
Winemaking and Aging:
The plots were carefully monitored by Baron Philippe de Rothschild's winemakers. Grapes affected by noble rot are harvested manually in successive passes to ensure optimal over-ripening.
Alcoholic fermentation is stopped before completion to preserve the roundness and freshness of the wine.
This is followed by aging for 10 months in vats on the lees, with minimal addition of sulfites.
Assemblage:
- Sémillon (90%): Contributes to roundness and density.
- Sauvignon Blanc (5%): Adds fruitiness and freshness.
- Muscadelle (5%): Provides finesse.
