GRAPE VARIETIES: 100% Sauvignon.
SOILS: The plots with the best balance between soil, plant and microclimate are selected: North facing hills for this wine. Yield control through optimal nutrition management and sprouts. The vines of Versant Sauvignon are situated on the sunny north-facing slopes near Puichéric (Languedoc-Roussillon). The soil is made of limestone-clay loam that retains moisture so that the plant can grow well.
VINIFICATION: work under reduced atmosphere to preserve the shine of the aromas. Pneumatic pressing. Stabilization of deposits for 5-6 days to extract thiol precursors. Cold static clarification (48 hours). Alcoholic fermentation in stainless steel temperature controlled vats.
AGING: 4 months in stainless steel.
TASTING NOTES: Bright pale yellow color with green hues. Intense nose with fresh (lemon, kiwi, forest) and ripe (pear, passion fruit) aromas. Lively palate with mineral notes of citrus and gooseberry sprouts
