Description
Chablis produces exclusively white wines. The unique subsoils give the wines a freshness, a purity and typical mineral and iodine-like notes.
Soil
Kimmeridgian — grey marls alternating with limestone beds that are very rich in fossils.
Winemaking & Ageing
Once hand-harvested, the grapes are pressed and then placed in demi-muids (barrels of around 600 litres) for fermentation. Ageing takes place in two-wine demi-muids for 8 to 10 months.
Tasting Notes
A delicate nose opening on white and dried fruits with a touch of butter and honey. On the palate, the freshness is supported by body. A wine with generosity.
Food Pairings
Oysters, andouillette Chablis-style (a traditional French sausage), white asparagus, goat's cheese and Comté.
