Description
William Fèvre Chablis Grand Cru Bougros 2023 is a great white wine from Burgundy, originating from the Bougros climat, on the slopes of the Grands Crus of Chablis.
The steep, stony slopes that stretch to the right and left of the Serein River are the cradle of a history spanning over 150 million years. A unique terroir of Kimmeridgian soil, an alternation of marl and marly limestone, which gives Chablis wines a mineral character and immense freshness. An enviable typicity, often imitated, but never equaled.
However incomparable and admirable a terroir may be, it can only reveal its full potential through human intervention. At Domaine William Fèvre, everything is done, regardless of the appellation level, to express the authenticity of the Chablis terroirs.

Profile:
- Color: Straw yellow with greenish reflections.
- Aromas: Sicilian lemon, green apple, pear, white flowers, wet stone, saline/marine touch; notes of flint (smoky) and light brioche or hazelnut may appear with aeration or a few years in the bottle.
- Palate: Structured and intense for a Chablis; citrus and stone fruits, high and well-balanced acidity, plenty of chalky minerality, medium+ to full body, long and tense finish.
- Wood: Very well integrated, more texture than oak flavor.
Storage and Consumption
- It is already pleasing now with aeration, but should show its best between 2026–2035+ , when the structure and minerality integrate and notes of honey, dried fruit, cream, truffle, etc. emerge.
Harmonization
- Oysters and seafood in general (especially scallops and lobster)
- Fine fish (sole, turbot, halibut) with butter/cream sauces
- Poultry with creamy sauce or mushrooms (such as morels)
- Cheeses: Comté, cured goat cheeses
