Harvest : Manual harvesting is usually done at very good maturity (higher natural potential for alcohol 14%).
Soil : The grapes used to develop the “Le Méal” Plot Selection come from the slopes of Méal. It is a very old glacial fluvial alluvium soil, with many small stones favoring soil heating.
Vinification : After pressing the whole grapes, the must is cooled for 24 to 48 hours. About 50% of the volume is vinified in new semi-muids and the others ferment in tanks.
Aging : Before bottling, aging takes place in barrels with batonnages and is monitored with frequent tastings. These are the organoleptic criteria that determine the duration of passage through the wood. In general, bottling takes place 10 to 12 months after harvesting.

Depending on the vintage, the wine can be stored for 30 to 60 years or up to 50 to 75 years.
